pink champagne

raise your hand if you are surprised that this is a favorite of mine?!?!  no-one?  hmmmm  i’m so transparent apparently.  🙂

saturday night we planned to celebrate daughter crystal’s and SIL scottie’s birthdays.  crystal was not feeling well.  and we ate her cake.  so sunday when crystal felt better, we made cupcakes.  🙂

this is my brand spanking new PINK mixer that i received for mother’s day from the family.  i LOVE LOVE LOVE it!  and just because i’m odd, i didn’t use it until i was ready to make pink champagne cupcakes!

i guess i decided on “action” shots!  the 1st is the cake mix and the 2nd is the frosting.  they are super easy to make and both include champagne.

and you can’t see it, but there is a little flower on the bottom of the cupcake liner.  i thot it was important for you to know that.

and finally the recipe… know you wanted it.

1 box betty crocker supermoist white cake mix

1 1/4 cups champagne ( i like ballatore)

1/3 cup veg oil

3 egg whites

4-5 drops red food color

heat oven to 350 (325 for dark or nonstick pan) place paper baking cup in each of 24 regular-size muffin cups (mine only made 22)

in large bowl combine dry cake mix and champagne.  add oil, eggs, and food color.  beat with electric mixer on medium speed for 2 minutes.  divide batter evenly among muffin cups

bake 17-22 minutes or until toothpick inserted in center comes out clean.  cool 10 minutes.  remove from pan to cooling rack.  cool completely, about 30 minutes

in medium bowl beat frosting ingredients with electric mixer on medium speed until smooth.  frost cupcakes.  sprinkle with pink sugar and/or pearls.

champagne frosting:

1/2 cup butter-softened

4 cups powdered sugar

1/4 cup champagne

1 teaspoon vanilla

4-5 drops red food color

you will have left over champagne after making cakes and frosting.  consume while eating the cupcakes!  YUM!

    Oh my stink!! I want to jump through the computer screen!!!! Those look yummy!! And you did say to start with two bottles of champagne and consume what you don’t use… right?! 😀

      it’s important to make sure there is always enuf champagne, so yes indeed, start with two bottles!

    LOVE the mixer…..I want one in red. Only problem is I don’t have any counter space to put it on. :o(

    Cupcakes are pretty… the cakestand.

      the red one is BEAUTIFUL! and yes, it does take counter space. i think you were with me when i got the cakestands!

    Yummo, can’t believe we didn’t get an invite to eat cupcakes and drink champagne!!! Although it would have killed the ol’ diet but I guess the homemade rhubarb pie did that! I can’t wait to have a reason to try out these cupcakes. See you Thursday.

    I haven’t checked in with you for so long! Congrats on new grandson #3! What darling boys and how wonderful to have a grandma chronicle their lives. You should turn it into a Shutterfly book or something. Great to catch up with your goings and comings. I wanted to let you know I have a mtg on the 21st at 5:30 so probably won’t make the b’day event. I’ll go home your way after my mtg around 7:00 or so and see if you are still playing.

      i know! you’ve been busy retiring and all so it’s all good! bummer about the meeting, but YES! do swing by, we’re being very casual–no agenda just hanging out!
