and because the recipes are already on my computer, i’ll post a couple of the recipes at a time:

Pineapple Pretzel Salad- this does not make a big batch.  in family type situation, i double it.  it tastes like MORE!

1/2 C crushed pretzels (I use more)
1/2 C sugar
1/2 C butter
+ Mix above ingredients & bake in a 9×13 pan @ 400 degrees for 7  minutes.  Cool then crush in a baggy to crumble.
+ Mix together:
8 oz cream cheese (room temp)
1/2 C sugar
20 oz can crushed pineapple (drained)
8 oz cool whip.
+ immediately before serving, add crumble mix.

Green bean and blue cheese salad – super simple but yummy!

1 1/2 cups cut fresh green beans
1/2 cup crumbled blue cheese
1/2 cup pitted ripe olives
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
+ place green beans in a small saucepan and cover with water.  Bring to a boil.  Cook, uncovered, for 8-10 minutes or until crisp-tender.  Drain.  Place the beans in a bowl; refrigerate until chilled.

+Add blue cheese, olives, oil, salt and pepper; toss gently to coat.  + Refrigerate until serving.

Broccoli Salad-  this makes a big batch.  be prepared to share with friends.

1 large bunch broccoli cut into bite size pieces
1/2 cup onion-chopped
1 cup celery-chopped
1/2 cup mixed dry fruit bits OR 1 cup yellow raisins
1/4 cup bacon-fried crisp
1 cup cashews, sunflower seeds or toasted almonds

Dressing
1 cup Miracle whip or mayonnaise
1/2 cup sugar
2 TBSP vinegar

Mix together and refrigerate.  About 1 1/2 hours before serving, add bacon to dressing.  Just before serving, combine dressing and broccoli mix.  Add nuts.
