i didn’t leave him cookies, i left him CHEESE

okay, that’s a line from a commercial from years back.

so i’ve not posted in a while on account that i’ve been crazy mad busy!  never fear though, the usual mundane things are still going on in my life….just haven’t adjusted my schedule to allow time to bore you with the deets.

my sister is coming from australia for a few weeks later this month.  i have tons to get done before she gets here.  one of her requests is for fried cheese.  it’s very simple (1 ingredient…..cheese) and pretty easy.  i hadn’t made it in a long time so i figured i better practice.

so okay, i could have cleaned off the table (don’t have that penny in the corner of the pic for any particular reason) and i could have wiped off the plate when i took one piece off but no, i left the crumbs.  and i could re-do the photos but no…..the cheese got eaten already!

anyhoo…..just shredd up parmesean cheese, sprinkle it in a hot non stick pan and fry it until it bubbles a bit, flip it over and crisp up the other side.  it will be a bit ooyeee gooyee when you take it out of the pan, but it crisps up as it cools.  i cool it on a paper towel.  looks a bit like lace if you do it right.  too much cheese and it won’t crisp up.

    My favorite restaurant puts that in their salads and I had never figured out how to do it. And I’m not telling you how many ways I have tried… OK I may have lost count…. but really… no oil nothing just fry it?! Thank you VERY much!!! I feel salads coming on for dinner!!

    I can still see the girl in the commerical saying it – gosh why would Santa want cookies when he could have cheese????

    no oil jan, there is a fair amount of oil in the cheese as it melts so i’ve never added anything. i make one at a time in a small fry pan on medium heat.
