supper swap-gayle’s cassarole

well let me just say, this was a huge hit with my peeps. i made 4 recipes. swapped 2 out, kept one for myself and took one to a church potluck. yumbo! i wondered how it would do sitting in a warming oven for an hour after being completely cooked, but it was no problem (i even had a couple of GOOD COOKERS ask for the recipe. from me! imagine!). i also substituted “flat out wraps” for the tortillas. it’s a newer product at my little grocery store and is supposed to be really good for you (bob green’s seal of approval is on it) and also a fresh salsa product instead of the standard prepared salsa (it mostly just is chunky little veggie bits…not much of a red sauce) and the recipe seemed no worse for the substitutions. it’s yummy fresh out of the oven AND reheated the next day. here’s gayle’s recipe or you can zip over and see a picture of the cassarole on her BLOG

 

Quesadilla Chicken Casserole

2 cups diced chicken or turkey

1 10 oz can cheddar cheese soup

4 oz. pepper jack cheese, cubed or grated

1 16 oz jar chunky salsa

8 (8 inch) tortillas (corn or flour, as preferred)

1 10 oz can enchilada sauce

1 cup grated cheese (I like the taco flavor shredded)


Preheat oven to 350. Mix first 4 ingredients in a saucepan. Heat through completely, until pepper jack cheese is melted.

Grease bottom and sides of 8”x12” baking dish with shortening or cooking spray. Line bottom and sides of baking dish with 1 layer of tortillas. You can use any size of tortillas, just tear them to fill in the empty spots. Spoon half of cheesy chicken mixture over tortillas. Repeat with another layer of tortillas and then cheesy chicken mixture. Add one more layer of tortillas. Pour can of enchilada sauce on top. Sprinkle cheese on top of sauce.

Cover loosely with aluminum foil and bake approximately 45 mins. Take cover off during last 10 minutes to brown the cheese.

You may want to serve with a dollop of sour cream and wedges of avocado, or a few black olives.

    Glad you liked it! I’m gonna try it next time with ground beef instead of turkey. That should work too.

    I’ve gotta try this recipe. I just had some great Chicken enchilada soup yesterday & if I can get my hands on that I will post it on my blog. 🙂
