chicken noodle. now i’m not much of a cooker. i don’t like it really. seems like it makes a mess. however, it’s important to eat and when you live in the sticks, options are somewhat limited. it doesn’t take too many times of “popping in” at meal time before friends and neighbors catch on and simply don’t answer the door. do they know i can SEE them sitting down to a delightful pot roast? so scott and i are sort of “waiting each other out” to see who will learn how to cook first. it’s a draw at this point. mostly i heat stuff up. mostly it comes out of cans, bags or boxes. and i have a personal mantra/mission statement regarding my cooking abilities. at my house it either looks good or it tastes good. you rarely get both.
however….even though it comes out of cans and bags, i make a great chicken noodle soup i do.
in the interest of eating more and cooking less, my daughter and sister and i have teamed up to do a supper swap kind of thing. tomorrow is our first exchange. i made…you guessed it! chicken noodle soup. and in return i’m getting lasagna and chicken enchilada’s. yum. i cook once and have meals for 3 plus nights. we are all 2 person tables (well carin has ian but he eats out of a jar) and are planning to exchange 4-6 serving meals on a weekly basis.
my recipe:
(can)swanson’s chicken broth
(can)green giant mexi corn (hello. south dakota here, i put corn in most everything!)
(bag)sliced baby carrots
(bag)sliced celery
(can)diced garlic and onion tomatoes
(bag)frozen egg noodles
chicken-home grown but bagged and frozen and not homegrown at MY home!
vary amounts based on how much you like to eat that particular item. if you don’t like celery, leave it out. it’s okay. really. no veggie police here.
heat until hot and noodles are soft. then eat. and repeat.
yum yum pigs bum! Book me in for a cup of your ‘homemade’ soup on the 8th of November, please!
can’t get fresher ingredients than those.
It is sooooooo yummy. Kayla took a bowl of it to the dorm so you know it is good!
