goin’ to the chapel and we’re gonna get married….

not me silly rabbit. i may have mentioned making mints. LOTS and LOTS of mints. it’s really easy to do and really….it makes me feel better about sitting vacuously in front of the tv watching my documentaries like BIG BROTHER, WIFE SWAP, (survivor isn’t on the list currently but OMGosh! I can’t wait until the China season.) etc. and since i’ve had so very many requests to show you how i do it (no one actually asked but i’m sure you all want to know right?!?!)

So cream cheese mints are kind of a “culture” thing. some people do it and some don’t. we do. i remember my grama lola making mints for the grandkid’s weddings. i remember making mints with gramcracker. the recipe is quite complicated so i have pictures for you…

1 package philly cream cheese (the FULL FAT kind…if you’re gonna eat mints, then eat mints don’t eat diet mints!) a bag and a quarter powdered sugar a pinch of salt. regular sugar. you also need some supplies….rubber molds, color, flavors, toothpicks

mashing….really important to have CLEAN hands. i can’t stress that enough. in fact…let’s all go wash our hands now. i got a thing about this.

okay i’m sure you’re all surprised that my mint ball is pink. GET OVER IT! :) and now the FUN part begins. make mini balls (size depends on the mold), roll in regular sugar. sugar your mold (shake some sugar around it in, some will stick, some won’t. dump out the won’ts), press out the mint onto a sugar’d tray (the sugar keeps it from sticking to the tray…i think. no one exactly told me that but that’s what i think.)

we have a chocolate double heart, a raspberry rose and an almond leaf spray. yum.

a single batch will make between 175 and 250 mints depending on the size of the mold. let them dry for a day or so, then flip ‘em and let them dry some more. they freeze well. take out of freezer the morning of the big day. check check today is Dawn’s big day.

  1. Oh yum!! We used to have those at every occassion when I was growing up… but I never knew how to make them… I feel at least 10 lbs coming on ;-)

  2. Where’s Tom? I thought he was helping you make the mints? I usually eat so much of them before the occasion, I’m not so much into them! Great job as always – I’m sure glad you’re my sister that can do anything so I can lean on you when I need something done (I can feel something coming) oh – and big news, I get to watch the Prince again on Sunday – want to come watch me play pretend Grama?

  6. good job. you always go the extra mile. Do you remember the year Grandma Lola made all the mints for one of you girl’s wedding and then she came down with pneumonia and we didn’t dare use them so threw them out and at the last minute had to make another 400 mints! Everyone had to pitch in and we got the job done.
